Nishikiya is a long-established confectionery shop that is said to have been established in 1790 under the auspice of Yozan Uesugi, the feudal lord of Yonezawa, Yamagata Prefecture. The confectionery is made from carefully selected red beans from Hokkaido. The peeled red beans are boiled into a paste. Peeling the azuki beans gives it a light, refreshing flavor. Pure  “Shirozaratou”  (Zarame: pure & clear sugar) with Kanten (agar) from Nagano Prefecture dissolved in natural water from Yamagata are added into the paste, which is then gently cooked and kneaded. The mild salt from the Hyakudomeki hot spring in Yamagata Prefecture adds a nice accent to the flavor.
