Kubara’s signature soup base is carefully crafted following a two-stage preparation process.
We start by creating a variety of broths: grilled flying fish, bonito, kelp and shitake all individually extracted. Once they are ready, we combine them and add heated soy sauce. This concentrated base can be used for somen and udon noodle dishes as well as an all-purpose seasoning for various dishes.
