A crisp cheese sablé, baked in Obihiro, Hokkaido, rich with butter and cheese. The flavor is gentle and savory rather than sweet. It works with coffee in the afternoon and with a glass of wine later.
The shape is not decorative. Each sablé is formed as a brick silo, the structure that stands over the farmland of the Tokachi plain and the thing people picture when they picture Hokkaido agriculture.
Open one and there is something else. Every individual wrapper carries a short poem, written by a child from the Tokachi area. They are printed in Japanese, so most of our customers cannot read them — ask us and we will tell you what yours says.
